Recipe
Serves 4 | 40 minutes
Ingredients:
500g chicken thighs, cubed
1/2 cup peanut butter
1 tbsp Thai red curry paste
2 tbsp soy sauce
1 tbsp fish sauce
Juice of half a lime
250ml coconut milk
1 tbsp vegetable oil
1 cup jasmine rice
1/4 cup crushed peanuts
Fresh coriander and chilli oil to serve
Instructions:
Begin by making the sauce. Mix peanut butter, Thai red curry paste, soy sauce, fish sauce, lime juice, and 50ml of coconut milk. Coat the diced chicken with half of the sauce and thread it onto skewers. This should yield about 8 or 9 skewers. Let them marinate while you prepare the rice.
Heat a little oil in a pan and fry the skewers. Let them brown on one side before turning, and continue cooking until they are cooked through, which should take about 10-15 minutes.
In a small pot, combine the remaining sauce with the rest of the coconut milk. Stir on low heat until the mixture becomes smooth and creamy.
Serve the chicken over steamed rice, generously spooning over the sauce. Top with crushed peanuts, fresh coriander, and a drizzle of chilli oil.
